About NZ Food Safety Assessments
Under the Food Act 2014, food businesses in New Zealand must operate under a food control plan or national programme. The Simply Safe and Suitable (SSS) template is MPI's approved food control plan for low to medium risk food businesses including cafes, restaurants, and catering operations.
Food safety knowledge is assessed as part of:
- Food control plan verification: MPI-approved verifiers check operator knowledge of their food safety obligations
- Food handler training: staff may be assessed on food safety principles as part of induction or certification
- Hospitality qualifications: NZQA unit standards in food safety require demonstrated knowledge
- Council licensing: some councils require food safety competency as part of premises registration
Important: The Food Act 2014 replaced the Food Hygiene Regulations 1974. Many food workers still operate under old assumptions. Knowing the current legal framework is essential for both compliance and assessment purposes.
Key NZ Food Safety Rules to Know
- Temperature danger zone: 4°C to 60°C. Food must not be held in this range for more than 2 hours
- Hot holding: Food must be kept at 60°C or above
- Cold holding: Food must be kept at 4°C or below (some high risk foods at 2°C)
- Handwashing: Minimum 20 seconds with liquid soap and warm water, rinse thoroughly
- Cross contamination: Raw and ready to eat foods must be kept separate at all times
- FIFO: First in, first out stock rotation to ensure freshness and reduce waste
- Verification: Food control plans must be verified at least once per 12 months by an MPI-approved verifier
